Place chicken wings in a freezer bag and add lemon juice. Seal tightly and place bag in a large bowl (this collects any juice in case of a leak in the bag).
Refrigerate overnight wings, turning the bag a couple times.
Preheat the oven to 400°F.
Prepare a baking sheet by lining with aluminum foil and misting with non-stick spray.
In a small mixing bowl, combine the lemon zest, black pepper, onion powder, and garlic powder.
Remove the chicken from bag and pat dry with paper towels.
Place chicken on prepared baking sheet, brush with olive oil, and rub with the lemon pepper seasoning you made.
Bake for 45-50 minutes, turning once.
