Ingredients

  • 3 tablespoons olive oil
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 8 cups low sodium chicken broth or vegetable broth
  • 1 teaspoon kosher salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper to taste
  • 1/2 head cabbage chopped in about 1 1/2" chunks
  • 4 medium carrots peeled chopped in circles
  • 2 stalks celery thinly sliced
  • 14.5 oz. can stewed tomatoes

Instructions

  • Add olive oil, onion, and garlic to your Dutch oven and cook on medium until onions begin to turn clear.
