Pizza Flavored Keto Stuffed Tomato Recipe
These Keto Stuffed Tomatoes are packed with pizza flavor...not carbs!
- 4 beefsteak tomatoes
- 2 oz pepperoni finely diced
- 2 oz red onion finely diced
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon stevia powder optional
- 1/2 teaspoon coarsely ground black pepper
- 1/2 teaspoon salt
- 1 1/2 cups shredded mozzarella cheese
Preheat broiler on high setting.
Wash tomatoes and slice off the top (with the stem). Scoop out the seeds/middle of the tomato with a spoon or cut away with a paring knife.
Stir together spices in a small mixing bowl.
Stuff the middle of each tomato with a layer of onion, pepperoni, spice mixture, and cheese. Gently press down the filling with your finger and repeat the layers. You want the tomato to be slightly overfilled, as the ingredients will shrink down when the cheese melts.
Spray a muffin tin or square baking dish with non-stick spray. Place the tomatoes in your prepped pan.
Bake under the broiler for 5-8 minutes, or until the cheese and tomatoes start to brown.
