Keto Vanilla Ice Cream Recipe
Smooth and creamy, this keto vanilla ice cream is easy to make with only 5 ingredients and only 4 grams net carbs per serving!
Large Mixing Bowl
- 4 cups heavy whipping cream divided
- 6 tablespoon butter cubed
- 3/4 cup erythritol or monkfruit sweetener
- 1 teaspoon vanilla extract
- 1/2 teaspoon vanilla bean paste optional
In a medium saucepan, combine half of the heavy whipping cream (2 cups), sweetener, and butter.
Simmer over medium heat, stirring this mixture until the butter has melted completely and the sweetener has dissolved. Now, bring to a boil and lower heat to a simmer and cook for 30 minutes, stirring occasionally.
Pour cream mixture into a heat-proof container and cool to room temperature.
Once cooled, stir in the vanilla extract and vanilla paste.
In a separate mixing bowl, whip up the 2 remaining cups of heavy whipping cream until peaks form.
Fold the vanilla mixture into the whipped cream, then scoop into the container in which you'll be freezing it.
Freeze for up to 4 hours, then remove from freezer and allow to thaw for 15-30 minutes or until able to scoop.
