- 2 pounds cauliflower processed into pearls
- 2 eggs
- 1/2 cup cheddar cheese
- 1/2 cup mozzarella cheese
- 1 teaspoon Italian seasoning
- salt & pepper to taste
Preheat oven to 400°F.
Chop cauliflower into florets, then steam until just cooked. Drain well.
Pulse cauliflower in a food processor until you have pearls, like rice. Use a cheesecloth or clean kitchen towel to squeeze as much moisture as possible out of the cauliflower.
Combine cauliflower pearls in a large mixing bowl with cheese, eggs, and seasoning. Stir until mixed.
Spoon pizza "dough" onto a baking sheet or pizza stone covered in parchment paper. Form a round shape with the dough.
Cover with another sheet of parchment paper and press to flatten to about 1/2" thickness. Use your hands if needed to finish molding your cauliflower pizza crust.
Bake for 25-30 minutes until golden and starting to dry out. Flip and bake for about 10 more minutes.
Remove from oven and add desired toppings. Bake for 5-10 additional minutes to melt cheese and cook toppings.
