Mug cakes are one of my favorite keto desserts because they’re so easy to make and super satisfying. I’ve experimented with quite a few different flavors, but this strawberry keto mug cake is one of my favorites.

That’s because there are real strawberries baked right into the bottom of the mug cake! It’s like those yogurts with the fruit on the bottom – that little taste of fruit makes the whole thing so much tastier!

Plus, if you flip your cake onto a plate and garnish with strawberries and a touch of real whipped cream, you’ve got a truly beautiful dessert!

How to Make a Keto Strawberry Upside Down Mug Cake

Chop strawberries into small pieces and spread on the bottom on your mugs or ramekins.

TIP: If you want to flip this keto strawberry cake onto a plate so you have the strawberries on top, I’d recommend cooking it in a ramekin (as pictured) instead of a mug. Otherwise, a mug works great!

Whip up your batter and pour into ramekins or mugs on top of strawberries.

Microwave for 90 seconds, keeping an eye on it. If the cake starts to look like it will bubble over the top of your mug, pause the microwave, let it settle, then finish cooking.

Allow to cool before flipping onto a plate or eating from the mug. Feel free to garnish with a slice of strawberry or a dollop of real whipped cream!

Ingredients

  • 1 tbsp Butter melted
  • 1 Egg beaten
  • 1 Tablespoon Sour cream
  • 2 Tablespoons Almond flour
  • 1 Tablespoon Coconut flour
  • 2 Tablespoons erythritol granulated
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 1/3 cup Strawberries chopped

Instructions

  • Grease two microwave safe ramekins and set aside.
  • In a mixing bowl, combine butter, egg, sour cream, almond flour, coconut flour, granulated erithritol, baking powder, baking soda and vanilla extract. Whisk until the ingredients are completely combined.
  • Cover the bottom of each mug with a layer of chopped strawberries.
  • Divide the batter between the two mugs or ramekins, spreading evenly on top of the strawberries.
  • Microwave the mugs on high for 90 seconds. If still wet on top, microwave for an additional 20 seconds.
  • Let the mugs sit for a minute or two, then flip over onto a plate. You can also enjoy straight from the mug!
