Keto Coconut Mojito

Summer is here and it is HOT in Texas!! Like really, really hot from morning to night!

The relentless Texas sun is brutal on my garden, but one thing that grows easily no matter what is mint. And what better to make with all that fresh mint than a refreshing mojito!

One sip of this fruity, minty, bubbly cocktail and you’ll start to cool off right away!

Another reason I love mojitos is that it is easy to make a mojito low carb, so that it doesn’t mess up your keto diet! So if you’ve been wondering, “are mojitos keto??” — THIS one is!!

This is my favorite keto cocktail right now — I hope you love it as much as I do!

What You’ll Need to Make Low Carb Mojitos

  • Mint leaves
  • Water

  • Whole lime
  • Coconut flakes — make sure they’re the unsweetened type!
  • Rum
  • Sparkling water — we used coconut flavored, but you can use regular sparkling water too.

Kitchen Supplies Used:

  • Muddler
  • Cocktail shaker set — This is my go-to set! My husband and I were bartenders for years, and the “Boston shaker” style tins are by far the easiest to use and clean!

How to Make a Keto Mojito with Rum

A traditional mojito is made with rum, so that is what we used here. My husband’s family is Cuban, so sticking to tradition is a must for me!

A traditional mojito is also made with sugar, but that is one tradition we have to break to keep our mojito keto friendly!

Instead, we made a sugar free simple syrup by reducing water, Swerve, and coconut flakes (unsweetened of course!) This coconut-flavored simple syrup is even easier to mix into a cocktail than regular sugar, which sometimes remains grainy. It also adds a unique tropical twist!

Once you have your simple syrup, all you do is muddle it in a glass with the lime juice and mint leaves. Then fill the glass with ice, add an ounce of rum, and top with club soda.

Give your drink a quick shake in a cocktail tin, or a swift stir, and you’re all set!

Is Rum Keto?

Many hard spirits contain zero grams of carbs — that includes the light (clear) rum used in this recipe. The main watch-out with alcohol and keto is the addition of flavorings or sugars.

Another thing to keep in mind is that even though straight alcohol contains no carbs, it should still be enjoyed in moderation. Excessive alcohol consumption can slow down the rate of ketosis and it also lowers inhibitions, making us more likely to make food choices we wouldn’t otherwise.

Can I use another type of liquor?

If rum isn’t your favorite spirit, a great substitution here is vodka because it is flavorless and mixes well with just about anything. Be sure to stick with plain vodka to avoid added sugars and carbs.

Ingredients

  • 3-4 mint leaves
  • 3 Tablespoons water
  • 1 Tablespoon monk fruit sweetener or erythritol such as Lakanto or Swerve
  • 1 lime
  • 1 Tablespoon unsweetened coconut flakes
  • 1 ounce light rum
  • 4 ounces coconut sparkling water sugar free

Instructions

  • Add water, sweetener, and coconut flakes to a small saucepan and bring to a boil. When the liquid starts to reduce and look syrup-y, remove pan from heat and set aside.
  • While simple syrup cools, cut your lime in half. Squeeze the juice from one half into your cocktail glass and keep the other half of the lime for garnish.
  • Add a generous pinch of mint leaves to glass.
  • Pour your homemade simple syrup into glass and muddle with the mint and lime juice.
  • Fill glass with ice, add rum, and top with sparkling water.
  • Garnish with a fresh lime slice and a sprig of mint leaves.
