Keto Peanut Butter Chocolate Chip Rice Krispie Treats

Crisp and chewy, these Keto Peanut Butter Rice Krispie Treats are almost better than the real thing! We used real, creamy peanut butter, sugar free chocolate chips, and low carb cereal to create a decadent treat that won’t kick you out of ketosis!

Keto Peanut Butter Chocolate Chip Rice Krispie Treats

Rice Krispy Treats are a classic treat that I loved as a kid. Our family has a bit of a sweet tooth, so whenever I find the perfect dessert that combines low carb living and a classic that is normally full of carbs and sugar, I can’t resist!

These peanut butter rice krispie treats come together in just a few minutes, and you have an easy delicious sweet treat to enjoy! These taste just like real rice krispy treats, but they are low carb and keto-friendly! In fact, there are only 4g net carbs in each one!

Are Rice Krispies Keto Friendly?

Regular Rice Krispies or other puffed rice cereal are definitely keto friendly. One cup of Rice Krispies contains 25g of carbs, which may be more than your daily allowance altogether!

The good news is that there are keto-friendly alternatives! High Key Protein Cereal mimics the look and texture of Rice Krispies, so it is what we used here. You’d never know the difference!

You could also use any other keto-friendly cereal, even if it is a different shape. We also enjoy Magic Spoon — that comes in a variety of flavors.

How to Make Peanut Butter Rice Krispy Treats

Pour the entire box of cereal into a large mixing bowl and set aside. Meanwhile, melt your butter in a saucepan. Once it’s melted, add the peanut butter and sugar free honey. Stir until this mixture is smooth, then remove from heat. You don’t want it to scorch!

Let the peanut butter mixture cool for a few minutes,  then pour over the cereal. Stir to combine well and allow to sit and cool a few more minutes. You want it to be cool enough that it won’t melt chocolate chips, but still soft enough to work with easily.

Stir in about ⅔ of the chocolate chips, then press the rice krispie treats into your greased baking dish. 

TIP: Use a piece of parchment paper to press the mixture down to keep it from sticking to your hands.

Sprinkle the rest of the chocolate chips on top, then place in the fridge to chill for 2 hours. Cut and served after the treats have set.

How are these rice krispie treats keto friendly with 13g total carbs?

If you look at the nutrition information in the recipe card below, you may notice that one serving contains about 13g total carbs. Seems like lot, but if you’re focused on NET CARBS, I’ve got good news for you!

These Keto Rice Krispie Treats are high in fiber, which is subtracted from total carbs. We also subtract any sugar alcohol (which the cereal contains).

So taking all that into account, each serving actually has just 4g net carbs. Awesome right?!

Ingredients

  • 1 box High Key Frosted Protein Cereal
  • 2 Tablespoons Butter unsalted
  • 5 Tablespoons Sugar-free honey
  • Cup Natural Peanut butter
  • ½ Cup Lily’s Semi-Sweet baking chips

Instructions

  • Add cereal to a large mixing bowl.
  • Melt butter in a saucepan over medium heat.
  • Once melted, stir in the peanut butter and sugar-free honey. Once smooth, remove from heat.
  • Allow mixture cool enough to handle, then pour into mixing bowl with cereal. Stir until well combined.

  • Allow to cool so mixture is not hot enough to melt chocolate, then stir in about 2/3 of the chocolate chips.
  • Press the mixture into the bottom of a well-greased 9x9 baking dish. Use a piece of parchment paper to press the mixture down to keep it from sticking to your hands.
  • Add the remaining chocolate chips to the top.
  • Chill for at least two hours before slicing and serving.
