Your tastebuds will love this low-carb Chinese chicken salad! With a homemade dressing, juicy chicken and crisp veggies, this easy yet flavorful Asian-inspired salad recipe is a staple on restaurant menus because it is SO tasty! However, restaurant dressings are usually loaded with sugar and carbs.
However, our homemade Asian chopped chicken salad has just 8 grams net carbs per serving, primarily from the vegetables. There’s no sugar added! If this is your go-to take-out salad order, then you will be blown away by how easy it is to create this simple keto version at home!
Now, I know that this isn’t necessarily 100% authentic Chinese food. One of my close friends is Chinese and he’s taken us to a lot of the favorite local spots in Houston, so we’ve definitely gotten to experience the real thing! However, this specific salad is often called “Chinese Chicken Salad” so for the sake of searchability, I’ve kept the name. You could also say that it is an Asian Chicken Salad or Asian-inspired.
But by any name, this is a delicious, easy, and low carb salad option that’s sure to be a keeper!

- 1 lb. Cooked chicken, chopped
- 1 Bag coleslaw mix
- 1 cup Red cabbage, shredded or chopped
- 1/4 cup Green onions, chopped
Vinaigrette Ingredients
- 3 Tablespoons Soy sauce or coconut aminos
- 2 teaspoons Sesame oil
- 1 teaspoon Minced garlic
- 1 teaspoon Ginger paste or grated ginger
- 1 Tablespoon Rice vinegar
- 1 Tablespoon Olive oil
- 1 teaspoon Brown sugar substitute

Instructions
- Add the coleslaw mix, shredded red cabbage, and green onion to a large mixing bowl and toss to combine.
- Stir in the chopped chicken.
- Whisk together the soy sauce, sesame oil, minced garlic, ginger paste, rice vinegar, olive oil, and brown sugar substitute in a small bowl.
- Pour the dressing into the large bowl containing the chicken salad and stir to coat evenly.
You can enjoy immediately or chill for a bit before serving.
Frequently Asked Questions
Can This Salad Be Made Ahead of Time?
I don’t normally recommend making salads a day in advance, but this chopped chicken salad is an exception to the rule! When made a few hours or even a day in advance, the flavors really have a chance to develop and the dressing soaks into the chicken and veggies. Be sure to keep in an airtight container in the refrigerator until you’re ready to enjoy your meal.
Is Dark Meat or White Meat Better for Chicken Salad?
It’s totally up to you! Both white and dark meat chicken are the same when it comes to counting carbs, and actually, dark meat chicken has more fat (which is what fuels the body in ketosis!)
One of the easiest ways to make this recipe is to get a rotisserie chicken and debone and chop the meat. It’s already cooked and seasoned!
You can also make your own rotisserie-style chicken using a whole chicken — if you have the time, this is a great way to save money and make sure that you add only the seasonings that you like.
