Easy Keto Cabbage Soup
Have you ever opened up your fridge only to realize you have a bunch of veggies that need to be used up ASAP? This happens to the best of us! One of the hardest parts of eating healthy is making sure that you use up all that fresh produce!
This delicious cabbage soup is a great way to use up leftover veggies, and it’s so easy to make! It tastes like it’s been simmering on the stovetop all day, but this easy soup recipe takes less than 45 minutes from start to finish!

Is Cabbage Soup Good for Weight Loss?
If you’ve heard that cabbage soup is good for weight loss, it might be due to the the fad diet known as the “Cabbage Soup Diet.” Essentially, this is a restrictive diet which involves eating cabbage soup as the primary food for a week.
Since cabbage (or any vegetable soup) is low calorie, it makes sense that if that’s all you’re eating you’re going to shed pounds. However, this is not a healthy or sustainable weight loss strategy.
That being said, it IS relatively low in carbs and a great way to get a lot of nutrition in your diet. While vegetables do have some carbs, I am in the camp that it is better to include vegetables in your diet than to exclude them all in order to cut out a couple extra carbs.
If you’d like to make this even lower in carbs, you can omit the higher-carb veggies such as carrots, or reduce the amount.
Cabbage Soup Ingredients
- 3 tablespoons olive oil
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 8 cups low sodium chicken broth, or vegetable broth
- 1 teaspoon kosher salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper, to taste
- 1/2 head cabbage, chopped in about 1 1/2″ chunks
- 4 medium carrots peeled, chopped in circles
- 2 stalks celery, thinly sliced
- 14.5 oz. can stewed tomatoes

How to Make Low Carb Cabbage Soup
Add olive oil, onions, and garlic to pan. Cook the onions until they start to become translucent.
Add carrots and celery and cook until the just begin to soften.
Add in the tomatoes and herbs and stir to coat all the veggies in seasoning.
Pour in the broth and add the chopped cabbage to the pot.
Simmer on low heat for 30 minutes.
Can you cook cabbage soup in a crock pot?
Sure! We used the stovetop method because it is faster and only takes about 30 minutes to cook.
However, you can use the slow cooker to cook your soup if you want an easy set-it-and-forget-it meal.
If using a crockpot, cook for 3-4 hours on high or 6-8 hours on low, until the cabbage and veggies are tender. You don’t need to sauté the onions, carrots, and celery first, but you can if you’d like the extra garlic flavor.
Is this soup vegetarian?
Almost!
We used chicken stock, but If you’re trying to make this vegetarian-friendly, all you have to do is swap out the chicken stock with vegetable stock.

- stock pot or Dutch oven
Ingredients
- 3 tablespoons olive oil
- 1/2 onion diced
- 2 cloves garlic minced
- 8 cups low sodium chicken broth or vegetable broth
- 1 teaspoon kosher salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper to taste
- 1/2 head cabbage chopped in about 1 1/2" chunks
- 4 medium carrots peeled chopped in circles
- 2 stalks celery thinly sliced
- 14.5 oz. can stewed tomatoes
Instructions
- Add olive oil, onion, and garlic to your Dutch oven and cook on medium until onions begin to turn clear.
- Add carrots and celery and cook a couple minutes until they begin to soften.
- Add in the broth, thyme, salt, pepper, cabbage, tomatoes, carrots, and celery
- Add tomatoes, thyme, salt, and pepper and stir so veggies are coated in seasoning.
- Pour broth into pot, add cabbage. Reduce heat to low and simmer for 30 minutes.
